How much food is wasted because of our obsession with the jack-o-lantern? I’m not saying I don’t like carving those scary old pumpkin faces. No. In fact, I look forward to it every year. But how many pumpkin pies or pumpkin casseroles are missed because the meat of the pumpkin can’t be used after having sat out for weeks (and even months) in the heat and cold, left to rot or dry out?

AND, do we really care??? After all, the seeds don’t usually go to waste… Not at my house, anyway.
