Matt’s (Refreshing) Cucumber/Tomato/Onion Salad
One of my favorite summertime (and all year long) salads is Matt’s (Refreshing) Tomato, Cucumber, Onion Salad. We have one or two pool parties each month during the summer and this is my go-to request for hubby to make. In addition to our usual party foods, this salad is cool, crisp, and refreshing. It hits exactly the right spot while sitting out in the hot Georgia sun, next to the pool.
I’ve been known to eat this all by itself. *big grin*
This salad is also a go-to staple in my work lunch bag. I eat the veggies, then pour the left-over liquid on top of my lettuce salad to use as a salad dressing. Yummo!
-2 Lg Cucumbers, peeled and sliced
-5 Med Roma Tomatoes, sliced
-1 Lg Vidalia Onion, sliced
-1 Cup Water
-1/2 Cup White Vinegar
-1/4 Cup Veg Oil
-1/4 Cup Sugar
-Salt and Pepper to taste
Peel and slice cucumbers - add them to bowl.
Slice tomato and onion - add to bowl.
Mix remaining ingredients together and pour over sliced vegetables.
Mix together.
Let sit in the fridge for 30 minutes before serving.
Note: We reserve the leftover juice from each salad for the next mixture (toss after third use).
As I said above, this is one of the best salads. I LOVE, LOVE, LOVE this!
Final Note: Hubby and I have swapped out the liquid in this salad for a bottle of Zesty Italian Dressing. Both are delicious. The above liquid is my favorite, while the Italian dressing is hubby’s.
