Healthy - Savory - Spicy - Filling
I’ve been looking for something new for my breakfasts. I’m a bit picky because I need it to be both healthy and filling. I also need something that will hold me over until lunchtime as I run from meeting to meeting. Oh, and I need it to be filling enough that I can say no to the very tempting donuts that are often shared at work.
My go-to meal is a medium-boiled egg. But lately, they have become a bit plain. So, hubby started experimenting with different recipes and came up with a super healthy (only 70 calories) and savory meal that hits the spot and keeps me going until lunch. I had to share it here with you.
Spicy Egg White Scramble
Ingredients:
-4 Egg Whites
-Low-calorie cooking spray
-Ghost Pepper Salt - to taste
-2 pinches Olivelle’s Wild Garlic
Steps:
1. Separate egg whites and yolks.
2. Place egg whites in a small bowl. Dispose of or reserve yolks for another recipe.
3. Spray small saute pan with low-calorie cooking spray.
4. Heat pan on medium heat.
5. In the bowl of egg whites, add the two pinches of wild garlic seasoning.
6. Sprinkle in the desired amount of Ghost Pepper Salt. ***careful, this IS HOT!
7. Whisk the mixture together, then pour into the heated pan.
8. Fold egg whites together to mix in the pan.
9. Remove from heat when half-finished cooking and allow to finish cooking in the hot pan. (I prefer mine as a soft scramble.)
10. Dish and serve.
Note: Eat as is like I do… Mix it up and add other seasonings and cheeses. I sometimes like a nice Smoked Gruyere melted on top. We have also turned these ingredients into a yummy egg white omelet.
I have to add a few notes here about my choice of seasonings. We recently took a golf trip with some of our friends to Bend, Oregon. We took an afternoon for a little shopping and I was thrilled to find the Olivelle’s Wild Garlic at a cute little kitchen store. They had samples out and our group ended up buying out the Wild Garlic. The mix of the spice consists of tomato, wild garlic (ramson), herbs & spices (garlic, basil, oregano, sweet bell pepper), and salt. This is the perfect blend.

As soon as we entered, we were treated to a bunch of fun treats. When we asked about some of their spicier offerings, the clerk got a slight twinkle in her eye. That should have been our first clue. She offered my husband a paper spoon with several grains of their Ghost Pepper Salt. She warned him to just take a small amount, but he popped the whole thing in his mouth.
Wow! It took a second or two, then he said it hit. He ultimately had to accept her offering of powdered honey to tame down the burn. But I knew immediately we had to have it.
We bought it, brought it home and have been using it in just about everything, to include hamburger patties and tuna fillets.
I am seriously addicted to this spicy salt and since we only need a small amount, this bottle should last us a long time.
